Can An Unincorporated Organization Offer For-credit Internships?

I am planning on starting a nonprofit organization, but I need help setting it up in various ways (the business aspect, graphic arts, web development, etc.) I would really like to get this help for free as I have no money and I know you can’t accept tax-deductible donations before all the legal fees are paid, the paper work is done, and the organization is accepted by the government.
So I know I can just ask for volunteers, but I think I’d be more likely to get quality help if students could gain credit from it. Does anyone know if colleges or high schools would accept an internship from an unincorporated organization? Or, could they even get retroactive credit once the organization becomes incorporated? I tried to look it up but I couldn’t find anything. I think I’ve heard of single people hiring interns (like authors or something), but I’m not sure if they need to be affiliated with a company.
